black bean quesadilla recipe

This recipe never fails to fill empty tummies!  It's pretty simple and, of course, tasty.  It's also great if you have vegetarian guests.  Here's what you'll need.
















Ingredients:
1 can black beans - rinsed & drained
Ground cumin to taste {approximately 2 - 3 teaspoons}
Salt to taste
5 green onions
1 package of tortillas
Butter
16 oz bag of shredded cheese

Directions:
Put rinsed and drained beans in a bowl.

Rinse your green onions, cut off the root, and the top {basically using the white base}.

Cut onion into little slices & mix in with beans.

Season mixture with salt to taste {give your salt shaker a few good shakes}.

Sprinkle the cumin on the beans & onion and stir it all until they look nice and coated.

Butter the outside of your tortillas and place them on a baking sheet.

Spread the bean mixture on your tortilla.

Sprinkle with cheese {the more, the yummier}.

Top with another tortilla.

Repeat this until you've used the entire bean mixture.

It should yield about 4 quesadillas {depending on how bean-y you like them}.

Heat oven at 400 degrees and cook for 12 to 15 minutes or until brown and crispy.
